Rocky Road Cookie Bars
These no-bake Rocky Road Cookie Bars have everything you love - chocolate, chocolate chip cookies and marshmallows. They take 20 minutes to make, and can be in your belly in no time!
Ingredients
- 9 tablespoons butter, room temperature
- 32 ounces dark chocolate chips, room temperature
- 3 tablespoons light corn syrup
- 8 ounces crunchy chocolate chip cookies, off the shelf
- 1½ cups mini marshmallows
Instructions
- Spray a 9-inch square cake pan with cooking spray. (If you want beautiful cuts, line the pan with parchment paper and pop the whole thing out before cutting.)
- Put the cookies into a zip lock bag and break them into chunks with a rolling pin. (A food processor makes the chunks too small.)
- Place butter, chocolate and corn syrup into a microwaveable bowl, and microwave at 30-second intervals, stirring in between, until mixture is smooth.
- Fold the cookie pieces and marshmallows into the melted chocolate mixture.
- Add the mixture to the pan and spread it with a rubber scraper.
- Refrigerate for 2 – 4 hours (or until firm) to set and cut into squares to serve.
