Eggs and Sweet Potato Scramble
Sweet potato and a hint of cumin elevate your scrambled eggs. This dish also rocks Breakfast for Dinner!
Ingredients
- 4 eggs
- 3 tablespoons milk
- ¼ teaspoon cumin
- salt & pepper
- ½ tablespoon butter
- 1 medium sweet potato, peeled, quartered lengthwise and thinly sliced
- 1 green onion, sliced
- 1 cup baby spinach
- Hot pepper sauce (optional)
Instructions
- In a medium bowl, whisk together eggs, milk, cumin, salt and pepper.
- In a skillet, melt butter. Add potatoes and onions and cook about 8 minutes until potatoes are almost tender.
- Add spinach, season all vegetables and cook about 1 minute until spinach is just wilted.
- Pour egg mixture into the skillet, and allow to start to set, then fold into the vegetables. Cook until eggs are done to your likeness.
- Serve with hot sauce, if desired.
