Eggs and Sweet Potato Scramble

Sweet potato and a hint of cumin elevate your scrambled eggs. This dish also rocks Breakfast for Dinner!

Ingredients
  

  • 4 eggs
  • 3 tablespoons milk
  • ¼ teaspoon cumin
  • salt & pepper
  • ½ tablespoon butter
  • 1 medium sweet potato, peeled, quartered lengthwise and thinly sliced
  • 1 green onion, sliced
  • 1 cup baby spinach
  • Hot pepper sauce (optional)

Instructions
 

  • In a medium bowl, whisk together eggs, milk, cumin, salt and pepper.
  • In a skillet, melt butter. Add potatoes and onions and cook about 8 minutes until potatoes are almost tender.
  • Add spinach, season all vegetables and cook about 1 minute until spinach is just wilted.
  • Pour egg mixture into the skillet, and allow to start to set, then fold into the vegetables. Cook until eggs are done to your likeness.
  • Serve with hot sauce, if desired.
