Huevos a la Mexicana

Sunny Side Up Eggs spiced up with homemade chile sauce you make yourself from dried New Mexico Chiles. You'll be surprised how easy and fast it is.

Ingredients
  

  • 1 cup boiling water
  • 2 dried New Mexico Chiles
  • ½ teaspoon honey, to taste
  • ¼ teaspoon vinegar, to taste
  • non-stick cooking spray
  • 4 eggs

Instructions
 

  • Working on one chile at a time, use a paring knife to cut a slit all the way down one side of a chile. Open up the chile and remove the stem and seeds.
  • Wash hands and do not touch eyes until you have washed your hands.
  • Pour boiling water into a bowl over chiles and let sit for 30 minutes until softened. Don't throw away that valuable soaking water!
  • Place chiles, 1/4 cup of soaking water, honey and vinegar into a blender and blend until smooth. Adjust honey or vinegar as needed to taste.
  • Make eggs in a skillet with nonstick cooking spray.
  • Plate eggs. Drizzle chile sauce over the eggs.

Notes

  • I chose New Mexico Dried Chiles because they are the mildest. Habaneros are the hottest, and there are many in between to choose from.
    If your sauce is not smooth enough, run it through a sieve after you blend it. It should be a smooth and silky consistency.
