If you’re like us and love having eggs for breakfast, shake up your breakfast routine with these Mini Frittatas. These protein packed beauties look fancy on the plate, but are deceivingly easy to make. And, you can substitute ingredients; there are so many ways to enjoy this dish.

Ingredients
  

  • nonstick cooking spray
  • 9 eggs
  • ¼ teaspoon salt
  • black pepper
  • 3 strips bacon, cooked and chopped
  • 3 tablespoons thawed frozen spinach, drained and squeezed
  • 3 tablespoons diced tomatoes
  • 3 tablespoons diced onion
  • 3 tablespoons diced bell pepper
  • 2 ounces shredded cheese of your choice

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • Spray muffin tins with cooking spray.
  • In a large bowl whisk the eggs, and season with salt and pepper.
  • Mix in the remaining ingredients.
  • Fill and place tins on a cookie sheet and bake 20 to 25 minutes, until set.

Notes

  • As written: Keto. Gluten-free. Low carb. Omit cheese to make them Paleo or Whole30.
  • Substitute any combination of vegetables, meat and cheese.
  • I use pre-cooked meat for this recipe. It's speedier and neater.
  • This recipe is delicious without meat.
  • This makes a great Breakfast For Dinner recipe, paired with a green salad and bread.
  • Can be frozen.
