Chocolate Chip French Toast with Bacon

Sweet and salty were meant to be. This dish combines sweet chocolate chip brioche french toast with salty, crispy bacon. And it's smothered in maple syrup. What's not to love?
- 8 slices bacon, regular thickness
- 8 slices chocolate chip brioche bread
- 3 eggs
- ½ cup milk
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- dash salt
- ½ tablespoon butter
- maple syrup, warmed
For the Bacon
Preheat oven to 400 degrees Fahrenheit. Line a baking tray with parchment paper, then place the bacon side-by-side on the tray.
Cook the bacon for 18-20 minutes or until it's reached your desired level of crispiness. Remove tray from the oven, transfer the bacon to a paper towel-lined plate.
Chop bacon in bite-sized pieces.
For the Chocolate Chip French Toast
Beat eggs, milk, cinnamon, vanilla and salt together in a shallow dish.
Dip bread in egg mixture, turning to coat both sides evenly. Cook bread slices on lightly buttered nonstick griddle or skillet on medium heat until browned on both sides.
Plating
Plate two pieces of French Toast, cover with a ¼ of the bacon, and pour maple syrup over the top.
You may have extra, but there's none left over in my house when I make this recipe!
